Serve as a side dish, appetizer or as a main course.
While this is my first attempt at making chicken taquitos; they are amazing. Try them as a main dish, or make a huge hit at parties or gatherings.
What is a taquito?
A taquito is a rolled taco that contains filling that is deep-fried. This dish can be topped with an array of condiments such as sour cream, melted cheese, and guacamole.
Ingredients
2 chicken breasts
1 medium onion
10 corn or flour tortillas
Canola oil
Shredded sharp cheddar cheese
Taco seasoning mix
10 toothpicks
Taco Seasoning
1 tsp chili powder
1 tsp garlic powder
1 tsp dried oregano
1 tsp onion powder
1 tsp cumin
1 tsp salt
1 tsp black pepper
*Place spices in a sealed jar or Ziploc bag and shake up the ingredients to blend them.
Directions
Place the chicken on a plate and sprinkle taco season on both sides. Pre-cook chicken in the oven at 400 degrees for 20 minutes. Let it cool for about 10-15 minutes. You want it cool enough so that you do not burn your fingers. Once it has cooled, shred the chicken with a fork.
Time Saver
If you want to save time, you can also use a pre-cooked rotisserie chicken.
Chop up half an onion and sauté in a pan with 1-2 tbsp of canola oil for 2 minutes. Add the shredded chicken and cook for another 3 minutes. Remove from heat and place mixture into a bowl. Add a handful of cheese and stir into the chicken mixture, and set aside. You can add additional taco seasoning if you want a spicer flavor.
Soften Tortillas
Add more oil to the frying pan so that you have about an inch covering the bottom of the pan. Let the oil heat up so that you begin to see it bubble. Place two paper towels on a plate. Using a set of tongs, place a tortilla in the oil for a second or two, flip it over, remove it from oil and place the tortilla on the plate with paper towels. Repeat until all tortillas are softened. Let the tortillas cool for a few minutes. Blot the tortillas with a paper towel to remove excess oil.
Take a tortilla and place a generous line of chicken mixture. Roll the tortilla and put a toothpick through to hold it together. After everything is rolled up, use a set of tongs and place in hot oil. Roll the tortilla until all sides are browned, which shouldn’t take long. Set on another paper towel to drain.
Use your favorite dipping condiment and enjoy.
